Paryushan Special Khichdi
The most sacred Jain festival meal — simple, nourishing, completely NONG, and deeply comforting.

🛒 Ingredients
·1 pack Gits Jain Khichdi Mix
·2 tbsp pure ghee
·1 tsp cumin seeds
·¼ tsp turmeric
·1 pinch asafoetida (hing)
·Salt to taste
·Kadhi or papad to serve
·Fresh coriander to garnish
👨🍳 Method

Wash rice and dal from the mix twice under running water.

Heat ghee in a pressure cooker over medium flame.

Add cumin seeds and a pinch of hing — let them crackle.

Add turmeric, then washed khichdi mix. Stir gently for 1 minute.

Add 3 cups water and salt. Stir well.

Pressure cook for 3 whistles. Let pressure release naturally (10 mins).

Open, stir in an extra spoon of ghee. The khichdi should be soft and flowing.

Garnish with coriander. Serve with kadhi, papad, and pickle.
